Baião-de-dois is a cherished traditional Brazilian dish that embodies the heart and soul of northeastern Brazil, particularly the state of Ceará. Ingredients
- long-grain white rice – 1 cup / 200 g
- black-eyed peas – 1 cup / 180 g, cooked
- smoked sausage (linguiça) – 200 g, sliced
- bacon – 100 g, chopped
- onion – 1 medium, chopped
- garlic – 3 cloves, minced
- green bell pepper – 1, chopped
- coconut oil – 2 tbsp / 30 ml
- chicken broth – 2 cups / 480 ml
- fresh cilantro – 1/4 cup, chopped
- bay leaf – 1
- salt – to taste
- black pepper – to taste
Instructions
- In a large pot, heat coconut oil over medium heat. Add bacon and cook until crispy.
- Add sausage to the pot and cook for another 5 minutes until browned.
- Stir in the onion, garlic, and green bell pepper, cooking until the onion is translucent.
- Add the rice, stirring well to coat with oil and combine with the other ingredients.
- Pour in chicken broth, add the bay leaf, and season with salt and black pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes.
- Add the cooked black-eyed peas, gently stir, and continue to cook for an additional 5 minutes or until the rice is tender.
- Remove from heat, sprinkle with fresh cilantro, and serve warm.
