Ingredients
- Fresh dill – 1 cup / 60 g
- Dried lima beans – 1 cup / 200 g
- Water – 3 cups / 720 ml
- Garlic cloves – 4 cloves, minced
- Olive oil – 1/4 cup / 60 ml
- Eggs – 4 large
- Turmeric powder – 1/2 teaspoon
- Salt – to taste
- Black pepper – to taste
Instructions
- Soak the lima beans in water overnight to soften them.
- Drain the beans and place them in a pot with 3 cups of water. Cook until tender, about 30-40 minutes.
- In a large pan over medium heat, add olive oil and sauté the minced garlic until fragrant.
- Add turmeric, salt, and pepper to the garlic and stir for about 1 minute.
- Mix in the cooked beans and fresh dill, stirring well to combine the flavors.
- Create small wells in the bean mixture and crack the eggs into these wells.
- Cover the pan and allow the eggs to poach in the bean mix for 5-7 minutes until the whites are set but the yolks remain runny.
- Serve hot with steamed rice.
