Ingredients
- Eggplants – 2 large / 600 g
- Walnuts – 1 cup / 100 g
- Garlic – 2 cloves
- Coriander seeds – 1 teaspoon
- White wine vinegar – 2 tablespoons
- Olive oil – 3 tablespoons
- Salt – 1 teaspoon
- Ground black pepper – 1/2 teaspoon
- Water – 1/4 cup / 60 ml
- Fresh parsley – 1/4 cup, chopped / 15 g
- Pomegranate seeds – 1/4 cup / 40 g
Instructions
- Slice the eggplants lengthwise into thin strips, about 1/4 inch thick.
- Sprinkle salt over the eggplant slices and let them sit for 30 minutes to draw out moisture and reduce bitterness.
- Rinse the eggplant slices and pat them dry with paper towels.
- Heat olive oil in a pan over medium heat and fry the eggplant slices until golden brown on both sides. Remove and set aside on paper towels to absorb excess oil.
- In a food processor, combine walnuts, garlic, coriander seeds, vinegar, salt, pepper, and water. Blend until smooth, adding more water if necessary to achieve a paste-like consistency.
- Spread a thin layer of the walnut mixture over each fried eggplant slice and roll them up.
- Arrange the eggplant rolls on a platter and sprinkle with chopped parsley and pomegranate seeds for garnish.
