Ingredients

  • Eggplants – 2 large / 600 g
  • Walnuts – 1 cup / 100 g
  • Garlic – 2 cloves
  • Coriander seeds – 1 teaspoon
  • White wine vinegar – 2 tablespoons
  • Olive oil – 3 tablespoons
  • Salt – 1 teaspoon
  • Ground black pepper – 1/2 teaspoon
  • Water – 1/4 cup / 60 ml
  • Fresh parsley – 1/4 cup, chopped / 15 g
  • Pomegranate seeds – 1/4 cup / 40 g

Instructions

  1. Slice the eggplants lengthwise into thin strips, about 1/4 inch thick.
  2. Sprinkle salt over the eggplant slices and let them sit for 30 minutes to draw out moisture and reduce bitterness.
  3. Rinse the eggplant slices and pat them dry with paper towels.
  4. Heat olive oil in a pan over medium heat and fry the eggplant slices until golden brown on both sides. Remove and set aside on paper towels to absorb excess oil.
  5. In a food processor, combine walnuts, garlic, coriander seeds, vinegar, salt, pepper, and water. Blend until smooth, adding more water if necessary to achieve a paste-like consistency.
  6. Spread a thin layer of the walnut mixture over each fried eggplant slice and roll them up.
  7. Arrange the eggplant rolls on a platter and sprinkle with chopped parsley and pomegranate seeds for garnish.
