Ingredients

  • salted cod – 1 lb / 450 g
  • potatoes, peeled and quartered – 4 large / 800 g
  • carrots, peeled and cut in half – 4 medium / 300 g
  • cabbage, cut into wedges – 1 small / 400 g
  • hard-boiled eggs, peeled – 4
  • olive oil – 1/3 cup / 80 ml
  • white wine vinegar – 2 tablespoons / 30 ml
  • black olives – 1 cup / 150 g
  • onion, finely sliced – 1 medium / 150 g
  • salt and pepper – to taste

Instructions

  1. Soak the salted cod in cold water for at least 24 hours, changing the water several times to remove excess salt.
  2. In a large pot, bring water to a boil and add the soaked cod. Cook for 10 minutes or until it flakes easily with a fork. Remove the cod and keep warm.
  3. In the same pot, add the potatoes and carrots, and cook for about 10-15 minutes until almost tender.
  4. Add the cabbage wedges and continue cooking for another 5-7 minutes, until all vegetables are tender.
  5. Slice the hard-boiled eggs and place them along with the cod, vegetables, and olives on a large serving platter.
  6. Drizzle the olive oil and vinegar over the entire dish, and garnish with finely sliced onions.
  7. Season with freshly ground black pepper and salt to taste.
