Babka ziemniaczana, or Polish potato cake, is a cherished dish hailing from the northeastern regions of Poland. This rustic casserole combines grated potatoes, onions, and smoked bacon, baked to achieve a golden crust and tender interior. Traditionally, it is enjoyed as a comforting meal during cold months, often served with a dollop of sour cream or a side salad.
Ingredients
- potatoes – 2 kg / 4.4 lbs, peeled
- onion – 1 large, finely chopped
- smoked bacon – 200 g / 7 oz, diced
- eggs – 4 large
- all-purpose flour – 1/2 cup / 60 g
- salt – 1 tsp
- black pepper – 1/2 tsp
- butter – 2 tbsp, for greasing
- sour cream – 1 cup / 240 g, for serving
Instructions
- Preheat the oven to 180°C (350°F).
- In a pan, fry the diced bacon over medium heat until crisp, about 5 minutes. Remove with a slotted spoon and set aside.
- Grate the potatoes using a fine grater. Place the grated potatoes in a clean kitchen towel and wring out the excess moisture.
- In a large bowl, combine the grated potatoes, chopped onion, fried bacon, eggs, flour, salt, and pepper. Mix until well combined.
- Butter a baking dish (approximately 9×13 inches) generously.
- Spread the potato mixture evenly in the prepared dish and smooth the top.
- Bake for 60-70 minutes, or until golden brown and cooked through.
- Let it cool slightly before slicing. Serve warm with a dollop of sour cream.
