Ingredients

  • eggplants – 2 large / 1.5 kg
  • tahini – 1/2 cup / 120 ml
  • lemon juice – 1/4 cup / 60 ml
  • garlic cloves – 2, minced
  • olive oil – 2 tablespoons / 30 ml
  • salt – 1 teaspoon / 5 g
  • ground cumin – 1/2 teaspoon / 2 g
  • parsley – 2 tablespoons / 8 g, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pierce the eggplants in several places with a fork and place them on a baking sheet lined with parchment paper.
  3. Roast the eggplants for 40-45 minutes, until they are soft and the skin is charred.
  4. Remove from the oven and let them cool slightly.
  5. Peel the skin off the eggplants and scoop the flesh into a bowl.
  6. Add tahini, lemon juice, minced garlic, olive oil, salt, and cumin to the eggplant.
  7. Mash the mixture with a fork or potato masher until smooth and creamy.
  8. Adjust salt and lemon juice to taste.
  9. Garnish with chopped parsley and a drizzle of olive oil before serving.
