Ingredients
- eggplants – 2 large / 1.5 kg
- tahini – 1/2 cup / 120 ml
- lemon juice – 1/4 cup / 60 ml
- garlic cloves – 2, minced
- olive oil – 2 tablespoons / 30 ml
- salt – 1 teaspoon / 5 g
- ground cumin – 1/2 teaspoon / 2 g
- parsley – 2 tablespoons / 8 g, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Pierce the eggplants in several places with a fork and place them on a baking sheet lined with parchment paper.
- Roast the eggplants for 40-45 minutes, until they are soft and the skin is charred.
- Remove from the oven and let them cool slightly.
- Peel the skin off the eggplants and scoop the flesh into a bowl.
- Add tahini, lemon juice, minced garlic, olive oil, salt, and cumin to the eggplant.
- Mash the mixture with a fork or potato masher until smooth and creamy.
- Adjust salt and lemon juice to taste.
- Garnish with chopped parsley and a drizzle of olive oil before serving.
