Ayam Percik is a traditional Malaysian dish characterized by its tantalizing flavors and aromatic blend of spices. Originating from the northeastern state of Kelantan, this dish features grilled or roasted chicken bathed in a rich, spiced coconut milk sauce. The name ‘percik’ translates to ‘splash’, referring to the method of basting the chicken with the sauce during cooking. This dish is often served during festive occasions and gatherings, offering a taste of Malaysian culinary heritage in every succulent bite.

Ingredients

  • Chicken thighs – 1 kg / 2.2 lbs
  • Coconut milk – 400 ml / 1.7 cups
  • Red onion – 1 large / 150 g
  • Garlic cloves – 4 cloves / 20 g
  • Ginger – 1-inch piece / 25 g
  • Lemongrass – 2 stalks, bruised
  • Chili paste – 2 tbsp / 30 g
  • Turmeric powder – 1 tsp / 5 g
  • Coriander powder – 1 tsp / 5 g
  • Salt – 1 tsp / 5 g
  • Sugar – 1 tbsp / 15 g
  • Water – 1 cup / 240 ml

Instructions

  1. Blend the red onion, garlic, and ginger into a fine paste.
  2. In a pan, heat the blended paste with lemongrass until fragrant.
  3. Add chili paste, turmeric powder, coriander powder, salt, and sugar to the paste, stirring continuously for 5 minutes.
  4. Pour in coconut milk and water, then simmer for 15 minutes. Set aside to cool.
  5. Marinate chicken thighs in half of the sauce for at least 1 hour.
  6. Grill or roast the marinated chicken at 200°C (390°F) for 30-40 minutes, basting occasionally with the remaining sauce until cooked and slightly charred.
  7. Serve with additional sauce on the side.

Substitutions

  • Chicken thighs -> Chicken breast or drumsticks
  • Coconut milk -> Coconut cream diluted with water
  • Chili paste -> Fresh red chilies, blended
