Ingredients

  • chicken – 1.5 kg / 3.3 lbs, cut into pieces
  • vegetable oil – 1/2 cup / 120 ml
  • cinnamon stick – 1 stick
  • star anise – 2 pieces
  • cardamom pods – 4 pods
  • cloves – 3 pieces
  • tomato paste – 3 tbsp / 45 g
  • sugar – 2 tbsp / 30 g
  • salt – 1 tsp / 5 g
  • coconut milk – 1 cup / 240 ml
  • water – 1 cup / 240 ml
  • lemongrass – 2 stalks, smashed
  • fresh kaffir lime leaves – 5 leaves
  • coriander leaves – handful, chopped for garnish
  • red onion – 2 large, chopped
  • garlic – 4 cloves, minced
  • ginger – 1 inch piece, grated
  • red chilies – 6, sliced

Instructions

  1. Heat the oil in a large pot over medium heat. Add cinnamon, star anise, cardamom, and cloves. Fry until aromatic.
  2. Add the chopped onion, garlic, ginger, and sliced red chilies. Stir and cook until the onions are translucent.
  3. Stir in the tomato paste, followed by the chicken pieces, and coat well in the mixture.
  4. Add the sugar, salt, coconut milk, water, lemongrass, and kaffir lime leaves. Stir well.
  5. Bring to a simmer, cover, and cook for about 30 minutes or until the chicken is tender and the sauce has thickened.
  6. Garnish with fresh coriander leaves and serve hot with steamed rice.
