Ingredients

- water – 1 cup / 240 ml
- salt – 1/4 teaspoon / 1.5 g
- vegetable oil for frying – as needed
- sugar for syrup – 1 cup / 200 g
- water for syrup – 1/2 cup / 120 ml
- lemon juice – 1 tablespoon / 15 ml
- rose water – 1 teaspoon / 5 ml
- orange blossom water – 1 teaspoon / 5 ml
Instructions
- In a large bowl, mix flour, cornstarch, dry yeast, sugar, and salt.
- Gradually add water to the dry ingredients, mixing until a smooth, thick batter forms.
- Cover the bowl with a clean cloth and let the batter rise for about 1 hour in a warm place.
- While the dough rises, prepare the syrup: combine sugar, water, and lemon juice in a saucepan. Bring to a boil, reduce heat, and let simmer for 10 minutes until slightly thickened. Remove from heat and stir in rose and orange blossom water. Let it cool completely.
- Heat vegetable oil in a deep pan over medium heat.
- Spoon a small amount of batter into the oil, frying until golden and crisp, about 2-3 minutes per side.
- Remove the fried dough balls from the oil and drain on paper towels briefly before submerging them in the prepared syrup.
- Allow the Awameh to soak in the syrup for a few minutes before serving.
