Arroz marinero – Classic

Ingredients

  • olive oil – 3 tbsp / 45 ml
  • onion, finely chopped – 1 medium / 150 g
  • garlic cloves, minced – 3 cloves / 9 g
  • bell pepper, diced – 1 / 120 g
  • tomato, grated – 1 large / 180 g
  • saffron threads – 1/2 tsp / 0.5 g
  • paprika – 1 tsp / 2 g
  • short-grain rice – 1 1/2 cups / 300 g
  • seafood stock – 4 cups / 960 ml
  • mixed seafood (shrimp, mussels, squid) – 500 g / 1.1 lbs
  • peas – 1/2 cup / 70 g
  • fresh parsley, chopped – 2 tbsp / 8 g
  • lemon wedges – for serving

Instructions

  1. In a large paella pan, heat the olive oil over medium heat. Add the onion and garlic; sauté until the onion is translucent.
  2. Add the bell pepper and grated tomato. Cook until the tomato is reduced and the mixture thickens.
  3. Stir in the saffron threads and paprika, allowing them to release their color and aroma, then add the rice. Stir to coat the rice in the mixture.
  4. Pour in the seafood stock and bring to a simmer. Let the rice cook uncovered for about 15 minutes, stirring occasionally.
  5. Distribute the mixed seafood evenly over the rice, nestle them slightly into the rice. Sprinkle the peas over the top.
  6. Cook until the seafood is cooked through and the liquid is absorbed, around 10 more minutes. Avoid over-stirring to maintain the rice texture.
  7. Garnish with fresh parsley and serve with lemon wedges on the side.
