Ingredients
- medium-grain white rice – 2 cups / 370 g
- water – 4 cups / 960 ml
- canned corn kernels – 1 can / 15 oz / 425 g
- Vienna sausages – 2 cans / 9.5 oz / 270 g total
- olive oil – 2 tbsp / 30 ml
- sofrito – 1/4 cup / 60 g
- tomato sauce – 1/4 cup / 60 ml
- sazon seasoning – 1 packet / 1.41 g
- adobo seasoning – 1 tsp / 5 g
- salt – to taste
- black pepper – to taste
- cilantro – 2 tbsp / 4 g, chopped
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the sofrito and sauté for 2-3 minutes until fragrant.
- Stir in the tomato sauce, sazon, adobo, salt, and black pepper. Cook for another minute.
- Drain the corn and sausages, slicing the sausages into rounds, then add to the pot.
- Add the rice to the pot and stir to incorporate all ingredients.
- Pour in the water, bring to a boil, then reduce heat to low and cover.
- Cook for 20-25 minutes, or until the rice is tender and water is absorbed.
- Gently fold in the chopped cilantro before serving.
