  • Pigeon peas (gandules), drained – 1 can / 15 oz / 425 g
  • Medium-grain rice – 2 cups / 400 g
  • Chicken broth – 3 1/2 cups / 840 ml
  • Pimento-stuffed olives – 1/4 cup / 60 g
  • Capers – 2 tablespoons
  • Fresh cilantro, chopped – 1/4 cup / 15 g

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced pork shoulder and cook until browned.
  2. Stir in the sofrito, tomato sauce, sazon, and adobo seasoning. Cook for 2 minutes until aromatic.
  3. Add pigeon peas and rice to the pot, stirring to combine with the seasoned pork and sofrito.
  4. Pour in chicken broth, olives, and capers. Stir, bring to a boil, then reduce heat to low.
  5. Cover and simmer for 25-30 minutes, until rice is tender and liquid is absorbed.
  6. Fluff rice with a fork and garnish with fresh cilantro before serving.
