Antikristo is a traditional Greek meat dish with its origins deeply rooted in the ancient culinary practices of Crete. It represents a method of cooking lamb unique to the island, where whole cuts are seasoned simply but cooked in a distinctive way: placed against the heat of an open fire. The name ‘Antikristo’ translates to ‘opposite each other’, referring to the way the lamb pieces are arranged around the fire. This cooking style gives the meat a smoky flavor with a beautiful, crispy exterior, while keeping the inside juicy and tender. It’s a dish that embodies the simplicity and robust flavors of Cretan cuisine, bringing people together in a communal celebration of taste and tradition.

Ingredients

  • lamb shoulder (or leg) – 3 kg / 6.6 lbs
  • coarse sea salt – 3 tbsp / 45 g
  • extra virgin olive oil – 2 tbsp / 30 ml
  • fresh rosemary – 2 sprigs
  • freshly ground black pepper – 2 tsp / 10 g

Instructions

  1. Prepare a stable outdoor fire with plenty of wood. Allow the fire to burn down until you have a good bed of coals.
  2. While the fire burns, prepare the lamb by rubbing it thoroughly with coarse sea salt and olive oil.
  3. Insert rosemary sprigs under the skin of the lamb.
  4. Thread the lamb pieces on skewers or set up in a traditional antikristo rack with the skin facing the fire.
  5. Position the lamb around the heat source but not directly over the flames.
  6. Cook slowly for about 3-4 hours, rotating occasionally, until the exterior is deep golden brown and crispy, with an internal temperature of at least 70°C (160°F).
  7. Season with freshly ground black pepper before serving.
