Ingredients
- Boneless chicken thighs – 2 pounds / 900 g
- Aji panca paste – 2 tablespoons / 30 g
- Garlic, minced – 4 cloves
- Red wine vinegar – 1/3 cup / 80 ml
- Olive oil – 1/4 cup / 60 ml
- Salt – 1 teaspoon / 6 g
- Black pepper – 1/2 teaspoon / 3 g
- Cumin – 1 teaspoon / 2 g
- Paprika – 1 teaspoon / 2 g
- Skewers – 8-10
Instructions
- Cut the chicken thighs into 2-inch pieces and place in a large bowl.
- In a separate bowl, mix aji panca paste, minced garlic, red wine vinegar, olive oil, salt, pepper, cumin, and paprika.
- Pour the marinade over the chicken and mix well. Cover and let marinate in the refrigerator for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken pieces onto skewers.
- Grill the skewers for about 10-12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
- Serve hot with boiled potatoes and corn.
