Ingredients

  • fresh artichokes – 4 large

  • dill, chopped – 1/4 cup / 15 g
  • lemon juice – 1/4 cup / 60 ml
  • vegetable broth – 2 cups / 480 ml
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Prepare the artichokes by trimming and removing any tough leaves, then cut in half.
  2. In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the carrots, potatoes, and peas to the pot. Cook for an additional 5 minutes, stirring occasionally.
  4. Add the artichokes to the pot, followed by the dill and lemon juice. Stir to combine.
