Ampesi is a traditional Ghanaian dish that holds a special place in the culinary hearts of West Africa. Known for its simplicity and nourishing components, Ampesi typically features boiled starchy vegetables like yam, plantain, or cassava, often accompanied by a hearty stew or sauce made from vegetables, fish, or meat. This dish is not only a staple in many Ghanaian homes but also a comfort food that brings the rich flavors of the region to the table. Ingredients

  • yam – 2 lbs / 900 g
  • ripe plantains – 2 medium
  • water – 8 cups / 2 liters
  • salt – 1 tbsp / 15 g
  • tomatoes – 4 large, chopped
  • onion – 1 large, chopped
  • red bell pepper – 1, chopped
  • scotch bonnet pepper – 1, whole
  • palm oil – 1/2 cup / 120 ml
  • smoked fish – 1 cup / 150 g, flaked
  • spinach – 2 cups / 60 g, chopped
  • ground crayfish (optional) – 2 tbsp / 30 g
  • ginger – 1 tbsp / 15 g, grated
  • garlic – 2 cloves, minced

Instructions

  1. Peel and cut the yam into thick segments. Boil in a large pot of water along with salt until tender, about 20-25 minutes. Remove and set aside.
  2. Add the plantains to the same pot and boil until soft, about 10-15 minutes. Remove and set aside.
  3. In a separate pan, heat palm oil over medium heat. Sauté onions and garlic until fragrant.
  4. Add chopped tomatoes, red bell pepper, and whole scotch bonnet pepper. Cook until tender, about 10 minutes.
  5. Stir in flaked smoked fish, grated ginger, spinach, and optional ground crayfish. Simmer for another 5 minutes.
  6. Serve the yam and plantains on a platter, accompanied by the tomato stew.
