Amba – Classic

Amba is a tangy and spiced mango pickle spread that hails from India, traditionally associated with Middle Eastern and Indian cuisines. Known for its vibrant yellow color and bold flavors, this chutney-like condiment is made from ripe mangos, spices, and a hint of vinegar. It’s often paired with falafel, shawarma, or samosas, offering a sour-sweet and spicy kick that enhances any dish it accompanies.
Ingredients
- Ripe mangoes – 3 large / 900 g
- Vinegar – 1/4 cup / 60 ml
- Sugar – 2 tbsp / 25 g
- Turmeric powder – 1 tsp / 5 g
- Ground cumin – 1 tsp / 5 g
- Ground coriander – 1 tsp / 5 g
- Cayenne pepper – 1/2 tsp / 2.5 g
- Salt – 1 tsp / 5 g
- Mustard seeds – 1 tsp / 5 g
- Garlic cloves, minced – 3 cloves / 10 g
- Oil – 2 tbsp / 30 ml
Instructions
- Peel and dice the ripe mangoes into small cubes.
- In a large pot over medium heat, add oil and mustard seeds. Allow the seeds to pop.
- Add minced garlic, turmeric, cumin, coriander, and cayenne pepper. Stir for about a minute.
- Add the mango cubes to the pot, and stir well to coat with the spice mixture.
- Pour in the vinegar and add sugar and salt. Stir to combine all ingredients.
- Cover and let simmer for 20-25 minutes, occasionally stirring to prevent sticking, until the mixture thickens.
- Allow the Amba to cool before transferring it to a sterile jar. Store in the refrigerator.
