Açma is a soft, rich, Turkish pastry that hails from the bustling streets and vibrant bakeries of Türkiye. Known for its flaky layers and slight buttery sweetness, Açma reflects the diverse culinary traditions of the region. Simpler than a croissant but equally appetizing, it’s perfect with a cup of Turkish tea or coffee. A staple in Turkish breakfasts, Açma is enjoyed both at home and on the go.

Ingredients

  • all-purpose flour – 4 cups / 480 g
  • warm milk – 1 cup / 240 ml
  • dry yeast – 1 tablespoon
  • sugar – 2 tablespoons
  • salt – 1 teaspoon
  • unsalted butter (softened) – 100 g / 7 tablespoons
  • olive oil – 1/3 cup / 80 ml
  • egg – 1
  • egg yolk (for glazing) – 1
  • sesame seeds – 2 tablespoons

Instructions

  1. In a large bowl, mix warm milk, sugar, and yeast. Let it sit for 10 minutes until frothy.
  2. Add olive oil, egg, softened butter, and salt to the yeast mixture and stir until well combined.
  3. Gradually add flour, mixing with a wooden spoon or your hands until a soft dough forms.
  4. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover it, and let rise in a warm place for 1-2 hours, or until doubled in size.
  6. Preheat the oven to 180°C (350°F).
  7. Divide the dough into 6 equal parts. Roll each part into a rope and form a circular shape by twisting the ends together.
  8. Place the pastries onto a baking sheet lined with parchment paper.
  9. Brush each with egg yolk and sprinkle with sesame seeds.
  10. Bake for 20-25 minutes or until golden brown. Let cool slightly before serving.
