Ingredients

  • potatoes – 3 medium / 450 g
  • cauliflower florets – 1 medium head / 500 g
  • onion – 1 large / 150 g
  • tomato – 2 medium / 250 g
  • ginger-garlic paste – 2 tablespoons / 30 g
  • turmeric powder – 1 teaspoon / 5 g
  • cumin seeds – 1 teaspoon / 5 g
  • coriander powder – 2 teaspoons / 10 g
  • cumin powder – 1 teaspoon / 5 g
  • red chili powder – 1/2 teaspoon / 2.5 g
  • vegetable oil – 3 tablespoons / 45 ml
  • salt – to taste
  • fresh coriander leaves – small bunch

Instructions

  1. Peel and cube the potatoes. Cut cauliflower into medium florets.
  2. Heat oil in a pan. Add cumin seeds; let them splutter.
  3. Add sliced onion and sauté until golden brown.
  4. Add ginger-garlic paste and sauté for a minute.
  5. Stir in chopped tomatoes, turmeric, coriander, cumin, and chili powder. Cook until tomatoes soften.
  6. Add potatoes and cauliflower. Mix well and add a little water to thin the sauce.
  7. Cover and cook over medium heat until vegetables are tender. Season with salt.
  8. Garnish with fresh coriander leaves and serve hot.

  • cauliflower -> broccoli
  • ginger-garlic paste -> freshly minced ginger and garlic
