Aloo Tama is a quintessential dish from Nepal that pairs potatoes (aloo) with bamboo shoots (tama) for a harmonious blend of textures and flavors. Ingredients

  • potatoes – 4 medium / 500 g
  • bamboo shoots – 1 cup / 200 g, sliced
  • onion – 1 large / 150 g, finely chopped
  • tomato – 2 medium / 250 g, chopped
  • green chili – 2, sliced
  • turmeric powder – 1 tsp / 5 g
  • cumin seeds – 1 tsp / 5 g
  • mustard oil – 2 tbsp / 30 ml
  • garam masala – 1 tsp / 5 g
  • coriander powder – 1 tbsp / 15 g
  • salt – to taste
  • water – 2 cups / 480 ml
  • fresh coriander leaves – 1/4 cup / 10 g, chopped

Instructions

  1. Peel and cube the potatoes.
  2. Heat mustard oil in a pot over medium heat.
  3. Add cumin seeds and allow them to splutter.
  4. Add chopped onions and sauté until golden brown.
  5. Stir in the tomatoes, green chilies, and turmeric powder. Cook until the mixture becomes saucy.
  6. Add the potato cubes and bamboo shoots. Mix well.
  7. Pour in water, add salt to taste, and bring to a boil.
  8. Reduce heat and cover the pot. Simmer for about 20 minutes or until potatoes are tender.
  9. Stir in garam masala and coriander powder.
  10. Adjust seasoning and cook for another 5 minutes.
  11. Garnish with fresh coriander leaves before serving.
