Ingredients

  • potatoes – 3 cups / 500 g, chopped
  • fresh fenugreek leaves – 2 cups / 100 g, chopped
  • oil – 2 tablespoons
  • cumin seeds – 1 teaspoon
  • turmeric powder – 1/2 teaspoon
  • chili powder – 1 teaspoon
  • salt – to taste
  • garlic – 4 cloves, minced
  • green chilies – 2, finely chopped

Instructions

  1. Heat oil in a pan over medium heat and add cumin seeds. Allow them to splutter.
  2. Add garlic and green chilies, sauté until garlic turns golden brown.
  3. Introduce the chopped potatoes to the pan, add turmeric and chili powder, mix well.
  4. Cover the pan, allow the potatoes to cook for 10 minutes until they start to soften.
  5. Add fenugreek leaves and salt to the potatoes, mix thoroughly.
  6. Cook for another 10-15 minutes, stirring occasionally, until potatoes are tender and fenugreek leaves are cooked.
  7. Adjust seasoning if necessary. Serve hot with naan or rice.

  • potatoes -> sweet potatoes
