Al-rashoof is a traditional Jordanian soup cherished for its heartwarming qualities, melded together from locally grown ingredients and adored during the cold months in Jordan. This hearty soup is a staple of Bedouin cuisine, known for its earthy, wholesome flavors stemming from a mix of green lentils, wheat, and flavorful herbs. Traditionally enjoyed by families gathered around a communal table, al-rashoof symbolizes hospitality and Jordanian culinary heritage.
Ingredients
- green lentils – 1 cup / 200 g
- bulgur wheat – 1 cup / 190 g
- yogurt – 2 cups / 480 ml
- water – 4 cups / 960 ml
- onion – 1 medium, finely chopped
- olive oil – 3 tablespoons
- cumin – 1 teaspoon
- salt – 1 teaspoon
- black pepper – 1/2 teaspoon
- chopped parsley – 1/4 cup / 15 g
Instructions
- Rinse the green lentils under cold water until the water runs clear.
- In a large pot, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the rinsed lentils and bulgur wheat to the pot, stirring to coat in the oil.
- Pour in the water and bring to a boil. Reduce the heat to low, cover, and simmer for 30-35 minutes until the lentils and wheat are tender.
- In a separate bowl, whisk the yogurt until smooth. Gradually stir it into the soup, being careful not to curdle the yogurt.
- Season with cumin, salt, and black pepper to taste.
- Serve hot, garnished with chopped parsley.
