Al-mulayhiya is a hearty and aromatic dish deeply rooted in the culinary traditions of Saudi Arabia. This rice dish, rich with spices and flavors, is a staple in Saudi cuisine. It traditionally features tender pieces of meat, often lamb or chicken, simmered with spices like cumin and coriander, and served over fluffy, fragrant rice. The dish is cherished for its warming and comforting qualities, making it a beloved choice especially during family gatherings and festive occasions.

Ingredients

  • long-grain basmati rice – 2 cups / 400 g
  • lamb stew meat – 1 lb / 450 g
  • onion, finely chopped – 1 large
  • garlic cloves, minced – 4 cloves
  • ground cumin – 1 tsp
  • ground coriander – 1 tsp
  • ground cinnamon – 1/2 tsp
  • bay leaves – 2
  • tomato paste – 2 tbsp
  • water or chicken broth – 4 cups / 960 ml
  • salt – to taste
  • black pepper – to taste
  • vegetable oil – 3 tbsp
  • fresh coriander leaves, chopped – 1/4 cup / 15 g

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Soak for 30 minutes, then drain.
  2. In a large pot, heat the vegetable oil over medium heat. Add the onions and sauté until soft and translucent, about 5 minutes.
  3. Stir in the garlic, cumin, coriander, cinnamon, and bay leaves. Cook for another minute until the spices are fragrant.
  4. Add the lamb pieces to the pot, seasoning with salt and pepper. Cook until browned on all sides.
  5. Stir in the tomato paste, cooking for another 2 minutes to develop its flavor.
  6. Pour in the water or chicken broth, bring to a boil, then reduce the heat. Cover and simmer for about 1 hour, or until the lamb is tender.
  7. Add the soaked and drained rice to the pot, stirring gently to combine.
  8. Cover and cook over low heat for 20 minutes, or until the rice is fully cooked and has absorbed the liquid.
  9. Fluff the rice with a fork and garnish with fresh chopped coriander before serving.
