Ingredients
- Beef chunks – 2 lbs / 900 g
- Onions, chopped – 2 large
- Garlic, minced – 4 cloves
- Tomatoes, diced – 2 large
- Tomato paste – 3 tbsp / 50 g
- Vegetable oil – 3 tbsp / 45 ml
- Water – 3 cups / 720 ml
- Salt – 2 tsp / 10 g
- Black pepper – 1 tsp / 5 g
- Cumin – 1 tbsp / 10 g
- Cinnamon stick – 1
- Bay leaf – 2
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until they become translucent.
- Add the minced garlic and diced tomatoes to the pot, stirring for another 2-3 minutes until they’re softened.
- Incorporate the tomato paste and cook for an additional minute while stirring constantly.
- Add the beef chunks to the pot, browning them on all sides for about 5-7 minutes.
- Pour in the water and add the salt, black pepper, cumin, cinnamon stick, and bay leaves. Bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let simmer for 1.5 to 2 hours or until the beef is tender, stirring occasionally.
- Adjust seasoning and serve hot with flatbread or rice.
