Akutaq, also known as Eskimo ice cream, is a traditional dessert from Alaska, often made by indigenous peoples of the region. This unique treat combines freshly whipped reindeer fat or another animal fat, berries, and sweeteners. Historically, Akutaq served as a high-energy food for Arctic survival, providing essential fats and nutrients. Modern versions have adapted with more accessible ingredients while maintaining the essence of this rich, culturally significant dish.

  • vegetable shortening – 1 cup / 190 g
  • granulated sugar – 1/2 cup / 100 g
  • water – 1/4 cup / 60 ml
