Ajvar – Classic

Ajvar is a vibrant and flavorful spread originating from North Macedonia, traditionally made from roasted red peppers and eggplant. It’s a staple in Balkan cuisine and is cherished for its smoky, slightly sweet, and subtly spicy flavor profile. Ingredients
- red bell peppers – 10 large / about 2 kg
- eggplant – 2 medium / about 500 g
- garlic cloves – 4 cloves / 20 g
- olive oil – 1/3 cup / 80 ml
- red wine vinegar – 2 tablespoons / 30 ml
- sugar – 1 teaspoon / 5 g
- salt – 1 teaspoon / 5 g
- black pepper – 1/2 teaspoon / 2 g
Instructions
- Preheat the oven to 220°C (430°F).
- Place the red bell peppers and eggplant on a baking sheet and roast for 30-45 minutes, until the skins are charred and the vegetables are tender.
- Remove the vegetables from the oven and transfer them to a bowl. Cover with plastic wrap and let them steam for 10 minutes, making it easier to peel the skins.
- Peel the skin off the roasted peppers and eggplant, and remove the seeds and stems.
- In a food processor, combine the peeled vegetables, garlic, and olive oil. Process until smooth.
- Transfer the mixture to a large pan, then add the red wine vinegar, sugar, salt, and black pepper.
- Simmer over medium heat for 30 minutes, stirring occasionally, until the ajvar thickens.
- Taste and adjust seasoning as necessary.
- Allow the ajvar to cool before serving.
