Ingredients

  • blanched almonds – 1 cup / 140 g
  • stale white bread – 100 g, crusts removed
  • garlic cloves – 3, peeled
  • cold water – 3 cups / 720 ml
  • olive oil – 1/2 cup / 120 ml
  • white wine vinegar – 2 tbsp / 30 ml
  • salt – 1 tsp / 5 g
  • seedless green grapes – 100 g, halved

Instructions

  1. In a bowl, soak the stale bread in water until softened. Squeeze out excess water.
  2. In a blender, combine almonds, softened bread, garlic, and salt. Blend until you have a smooth paste.
  3. Gradually add cold water to the blender while continuing to blend for a silky texture.
  4. With the blender running, slowly add olive oil and vinegar to emulsify the mixture.
  5. Chill the ajoblanco in the refrigerator for at least 2 hours.
  6. Before serving, stir gently and taste, adjusting salt or vinegar if necessary.
  7. Serve cold, garnished with halved green grapes.
