Ingredients
- salt cod – 500 g / 1.1 lbs
- olive oil – 100 ml / 6.7 tbsp
- large onion – 1, diced
- red bell pepper – 1, diced
- green bell pepper – 1, diced
- garlic cloves – 4, minced
- ripe tomatoes – 4, peeled and chopped
- bay leaf – 1
- sweet paprika – 1 tsp
- black pepper – to taste
- salt – to taste
- fresh parsley – for garnish
Instructions
- Soak the salt cod in cold water for 24 hours, changing the water 2-3 times.
- Heat olive oil in a large skillet over medium heat. Add onions and sauté until translucent.
- Add the red and green peppers to the skillet and cook until softened.
- Stir in the minced garlic and cook until fragrant.
- Incorporate the tomatoes, bay leaf, and paprika. Cook until the tomatoes break down into a sauce.
- Reduce heat, add drained salt cod, and simmer for 10-15 minutes until the cod is cooked through.
- Season with black pepper and salt as needed. Remove bay leaf before serving.
- Garnish with fresh parsley and serve hot with crusty bread.
