Ingredients

  • Aji amarillo peppers – 4 – 200 g
  • Cilantro – 1 cup packed – 30 g
  • Garlic cloves – 2 – 10 g
  • Lime juice – 2 tbsp
  • Olive oil – 3 tbsp
  • Salt – 1 tsp
  • Black pepper – 1/2 tsp
  • Water – 1/4 cup / 60 ml

Instructions

  1. Remove stems and seeds from the aji amarillo peppers.
  2. Blend aji amarillo peppers, cilantro, garlic, lime juice, olive oil, salt, and black pepper in a blender.
  3. Gradually add water until desired consistency is reached. The sauce should be smooth and slightly thick.
  4. Taste and adjust seasoning if necessary.
  5. Transfer to a serving bowl and serve immediately or store in the refrigerator for up to 5 days.

  • Aji amarillo peppers -> Yellow bell peppers with a pinch of cayenne pepper
  • Cilantro -> Parsley
  • Lime juice -> Lemon juice
