Ingredients
- fideos (thin spaghetti) – 400 g / 14 oz
- olive oil – 2 tbsp
- onion, finely chopped – 1 large / 150 g
- garlic cloves, minced – 3 cloves
- ají amarillo paste – 3 tbsp
- tomatoes, diced – 400 g / 14 oz
- vegetable broth – 500 ml / 2 cups
- green peas – 100 g / 3.5 oz
- carrot, diced – 1 medium / 100 g
- salt – to taste
- black pepper – to taste
- parsley, chopped – 2 tbsp
Instructions
- Cook the fideos in boiling salted water until al dente. Drain and set aside.
- In a large pan, heat the olive oil over medium heat. Sauté the onion until translucent.
- Add minced garlic and ají amarillo paste, stirring for 2 minutes until fragrant.
- Stir in the diced tomatoes, carrot, and peas. Cook for 5 minutes.
- Pour in the vegetable broth, stir and bring to a simmer.
- Add cooked fideos to the pan. Mix well to combine with the sauce.
- Season with salt and pepper, and simmer for 10 minutes.
- Serve hot, garnished with chopped parsley.
