Ingredients

  • Bamboo shoots – 500 g / 1.1 lbs
  • Pork belly – 250 g / 0.55 lbs
  • Soy sauce – 1/4 cup / 60 ml
  • White vinegar – 1/4 cup / 60 ml
  • Garlic, minced – 4 cloves
  • Bay leaves – 2
  • Black peppercorns – 1 tsp / 4 g
  • Onion, chopped – 1 medium / 150 g
  • Water – 1 cup / 240 ml
  • Cooking oil – 2 tbsp / 30 ml

Instructions

  1. Prepare the bamboo shoots by boiling them in water for 10 minutes, then drain and set aside.
  2. Heat the cooking oil in a pot over medium heat. Add the garlic and onion, and sauté until fragrant and translucent.
  3. Add the pork belly cubes to the pot. Cook until the pork begins to brown.
  4. Pour in the soy sauce and vinegar, then add the bay leaves and black peppercorns. Stir to combine.
  5. Add the bamboo shoots and water to the pot. Bring to a boil, then reduce heat to low and cover.
  6. Let the stew simmer for 30 minutes or until the pork is tender and the bamboo shoots absorb the flavors.
  7. Adjust seasoning with salt or additional soy sauce to taste before serving.
