Ingredients
- Bamboo shoots – 500 g / 1.1 lbs
- Pork belly – 250 g / 0.55 lbs
- Soy sauce – 1/4 cup / 60 ml
- White vinegar – 1/4 cup / 60 ml
- Garlic, minced – 4 cloves
- Bay leaves – 2
- Black peppercorns – 1 tsp / 4 g
- Onion, chopped – 1 medium / 150 g
- Water – 1 cup / 240 ml
- Cooking oil – 2 tbsp / 30 ml
Instructions
- Prepare the bamboo shoots by boiling them in water for 10 minutes, then drain and set aside.
- Heat the cooking oil in a pot over medium heat. Add the garlic and onion, and sauté until fragrant and translucent.
- Add the pork belly cubes to the pot. Cook until the pork begins to brown.
- Pour in the soy sauce and vinegar, then add the bay leaves and black peppercorns. Stir to combine.
- Add the bamboo shoots and water to the pot. Bring to a boil, then reduce heat to low and cover.
- Let the stew simmer for 30 minutes or until the pork is tender and the bamboo shoots absorb the flavors.
- Adjust seasoning with salt or additional soy sauce to taste before serving.
