Ingredients

  • chicken – 2 lbs / 900 g, bone-in, cut into serving pieces
  • soy sauce – 1/2 cup / 120 ml
  • vinegar – 1/4 cup / 60 ml
  • coconut milk – 1 cup / 240 ml
  • garlic – 5 cloves, crushed
  • bay leaves – 3 leaves
  • black pepper – 1 tsp / 5 g, whole
  • sugar – 1 tbsp / 15 g
  • onion – 1 medium, sliced
  • vegetable oil – 2 tbsp / 30 ml
  • water – 1 cup / 240 ml

Instructions

  1. In a large bowl, combine chicken, soy sauce, vinegar, and crushed garlic. Marinate for at least 30 minutes, preferably 1 hour in the refrigerator.
  2. In a large pot, heat oil over medium heat. Sauté onion until translucent.
  3. Add marinated chicken and brown on all sides for about 5 minutes.
  4. Pour in the marinade along with water, bay leaves, and whole black pepper. Simmer on low heat for about 25 minutes until chicken is tender.
  5. Stir in coconut milk and sugar. Cook for another 10 minutes until the sauce thickens slightly.
  6. Adjust seasoning with additional soy sauce or vinegar as needed.
  7. Serve hot with steamed rice.
