  • grouper fillets – 4 pieces / 680 g
  • lime juice – 1/4 cup / 60 ml
  • olive oil – 2 tablespoons / 30 ml
  • garlic cloves, minced – 3 cloves
  • fresh thyme – 2 teaspoons / 4 g
  • paprika – 1 teaspoon / 2 g
  • salt – 1 teaspoon / 5 g
  • black pepper – 1/2 teaspoon / 1 g
  • onion, thinly sliced – 1 medium / 110 g
  • bell pepper, thinly sliced – 1 medium / 120 g
  • tomatoes, chopped – 2 medium / 240 g
  • parsley, chopped – 2 tablespoons / 8 g

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place grouper fillets in a shallow baking dish.
  3. In a bowl, mix lime juice, olive oil, minced garlic, thyme, paprika, salt, and black pepper.
  4. Pour the mixture over the grouper fillets, ensuring they are fully coated.
  5. Layer onion and bell pepper slices over the fillets.
  6. Sprinkle chopped tomatoes on top.
  7. Cover the baking dish with foil and bake for 20-25 minutes, or until the fish flakes easily.
  8. Garnish with chopped parsley before serving.
