Aamat is a traditional Indian stew, hailing from the tribal regions of Chhattisgarh. Known for its earthy flavors and hearty ingredients, Aamat is typically prepared with bamboo shoots, lending a unique taste and aroma to the dish. Ingredients

  • Bamboo shoots – 300 g / 10.5 oz
  • Chickpea flour – 2 tablespoons / 16 g
  • Turmeric powder – 1 teaspoon / 2 g
  • Red chili powder – 1 teaspoon / 2 g
  • Mustard seeds – 1 teaspoon / 2 g
  • Cumin seeds – 1 teaspoon / 2 g
  • Coriander powder – 1 tablespoon / 8 g
  • Dry red chilies – 2 units
  • Garlic cloves – 4 cloves, minced
  • Ginger – 1 tablespoon, grated / 15 g
  • Oil – 2 tablespoons / 30 ml
  • Salt – to taste
  • Water – 4 cups / 960 ml
  • Coriander leaves – 2 tablespoons, chopped / 8 g

Instructions

  1. Wash and slice the bamboo shoots thinly.
  2. In a pan, dry roast the chickpea flour until golden brown and set aside.
  3. Heat oil in a pot and add mustard seeds, cumin seeds, and dry red chilies.
  4. Once they splutter, add minced garlic and grated ginger.
  5. Add the bamboo shoots, turmeric powder, red chili powder, coriander powder, and salt. Stir well.
  6. Pour in the water and bring to a boil, then reduce the heat and let simmer for 30 minutes.
  7. Stir in the roasted chickpea flour to thicken the stew, and let it cook for another 10 minutes.
  8. Garnish with chopped coriander leaves and serve hot.
