  • nutmeg – 1/4 teaspoon
  • vanilla extract – 1 teaspoon
  • lemon zest – from 1 lemon
  • baking powder – 1 teaspoon
  • salt – 1/2 teaspoon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, beating well after each addition.
  4. Stir in the vanilla extract and lemon zest.
  5. In a separate bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk, beginning and ending with the flour mixture.
  7. Mix until just combined and the batter is smooth.
  8. Pour the batter into a greased and floured baking pan.
  9. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  10. Let the pastry cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
