Ingredients

  • Arborio rice – 2 cups / 400 g
  • Olive oil – 2 tbsp / 30 ml
  • Garlic cloves, minced – 4
  • Onion, chopped – 1 large
  • Red bell pepper, diced – 1
  • Tomato paste – 2 tbsp / 30 g
  • Fish stock – 4 cups / 960 ml
  • Shrimp, peeled and deveined – 300 g / 10 oz
  • Clams – 500 g / 18 oz
  • Mussels – 250 g / 9 oz
  • Bay leaves – 2
  • White wine – 1/2 cup / 120 ml
  • Fresh parsley, chopped – 1/4 cup / 15 g
  • Salt – to taste
  • Black pepper – to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion, garlic, and red bell pepper, sautéing until the onion is translucent.
  2. Stir in the tomato paste and cook for another minute, then add the white wine and let it simmer until reduced by half.
  3. Add the rice to the pot, stirring to coat it with the flavors, then pour in the fish stock and add the bay leaves.
  4. Bring to a gentle boil, then reduce the heat and simmer, stirring occasionally, for about 10 minutes.
  5. Add the shrimp, clams, and mussels to the pot, cover, and cook for another 10 minutes or until the shellfish are open and the rice is tender.
  6. Remove the bay leaves, season with salt and black pepper, and stir in fresh parsley before serving.
