Ingredients

  • smoked pork collar – 1.5 kg / 3.3 lbs
  • broad beans (fava beans) – 1 kg / 2.2 lbs
  • onion – 2 large, diced
  • carrots – 2 medium, sliced
  • leeks – 1, sliced
  • bay leaves – 3
  • fresh thyme – 5-6 sprigs
  • garlic – 4 cloves, minced
  • vegetable broth – 1 liter / 4 cups
  • white wine – 250 ml / 1 cup
  • salt – to taste
  • pepper – to taste

Instructions

  1. Soak the smoked pork collar in cold water overnight to remove excess salt. Drain and pat dry.
  2. In a large pot, add the pork collar, cover with water, and bring to a boil. Reduce heat and simmer for 1.5 to 2 hours.
  3. In another pot, heat a drizzle of oil over medium heat. Add onions, garlic, leeks, and carrots, and sauté until soft.
  4. Pour in the white wine, let it reduce by half, then add vegetable broth, bay leaves, and thyme.
  5. Add the broad beans into the vegetable mixture, season with salt and pepper, and simmer for 30-40 minutes.
  6. Once the pork is tender, remove from the cooking liquid and slice into thick pieces.
  7. Serve the sliced pork over the broad beans and vegetable mixture, drizzled with some of the broth.
