Ingredients
- smoked pork collar – 1.5 kg / 3.3 lbs
- broad beans (fava beans) – 1 kg / 2.2 lbs
- onion – 2 large, diced
- carrots – 2 medium, sliced
- leeks – 1, sliced
- bay leaves – 3
- fresh thyme – 5-6 sprigs
- garlic – 4 cloves, minced
- vegetable broth – 1 liter / 4 cups
- white wine – 250 ml / 1 cup
- salt – to taste
- pepper – to taste
Instructions
- Soak the smoked pork collar in cold water overnight to remove excess salt. Drain and pat dry.
- In a large pot, add the pork collar, cover with water, and bring to a boil. Reduce heat and simmer for 1.5 to 2 hours.
- In another pot, heat a drizzle of oil over medium heat. Add onions, garlic, leeks, and carrots, and sauté until soft.
- Pour in the white wine, let it reduce by half, then add vegetable broth, bay leaves, and thyme.
- Add the broad beans into the vegetable mixture, season with salt and pepper, and simmer for 30-40 minutes.
- Once the pork is tender, remove from the cooking liquid and slice into thick pieces.
- Serve the sliced pork over the broad beans and vegetable mixture, drizzled with some of the broth.
