Ingredients
- beef chuck – 1 lb / 450 g
- beef stock – 2 cups / 480 ml
- butter – 4 tbsp / 56 g
- all-purpose flour – 4 tbsp / 30 g
- onion, finely chopped – 1 medium / 100 g
- parsley, finely chopped – 2 tbsp / 8 g
- nutmeg – 1/4 tsp / 1 g
- salt – 1 tsp / 6 g
- black pepper – 1/2 tsp / 1 g
- egg yolks – 2
- breadcrumb – 1 cup / 100 g
- all-purpose flour – for coating
- egg, beaten – 1
- bread crumbs – for coating
- vegetable oil – for deep frying
Instructions
- Cook the beef chuck in beef stock until tender, about 1.5 to 2 hours.
- Melt butter in a saucepan, add finely chopped onion, and sauté until translucent.
- Stir in 4 tbsp of flour to form a roux. Cook for 1-2 minutes.
- Gradually whisk in beef stock to form a thick sauce, then add the cooked, shredded beef.
- Stir in nutmeg, salt, pepper, and parsley. Allow mixture to cool, then chill in refrigerator for at least 2 hours.
- Shape chilled ragout into balls using a tablespoon, roll each in flour, dip in beaten egg, and coat with breadcrumbs.
- Heat oil in a deep fryer to 180°C / 350°F.
- Fry the bitterballen until golden brown, about 4-5 minutes. Serve warm.
