Ingredients

  • New potatoes – 500 g / 1 lb
  • Carrots – 200 g / 7 oz
  • Green beans – 150 g / 5 oz
  • Peas – 150 g / 5 oz
  • Leek – 1 large, sliced
  • Vegetable broth – 750 ml / 3 cups
  • Cream – 200 ml / 3/4 cup
  • Butter – 30 g / 2 tbsp
  • Fresh parsley – 2 tbsp, chopped
  • Salt and black pepper – to taste

Instructions

  1. Peel and dice the potatoes and carrots into bite-sized pieces.
  2. Trim and slice the green beans into 2 cm pieces.
  3. In a large pot, melt the butter over medium heat and add the sliced leeks. Sauté until softened.
  4. Add potatoes, carrots, green beans, and peas to the pot.
  5. Pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for about 15 minutes, until vegetables are tender.
  6. Stir in the cream and adjust the taste with salt and black pepper.
  7. Sprinkle with fresh parsley before serving.
