Ingredients

  • all-purpose flour – 2 1/4 cups / 270 g
  • unsalted butter – 1 1/4 cups / 285 g (divided)
  • cold water – 6 tablespoons / 90 ml
  • potatoes (peeled and sliced) – 1.5 lbs / 680 g
  • onions (sliced) – 2 medium / 300 g
  • salt – 1 teaspoon / 6 g
  • black pepper – to taste
  • nutmeg – 1/4 teaspoon / 1 g

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine flour and a pinch of salt. Rub in 1 cup (225 g) butter until the mixture resembles breadcrumbs.
  3. Add cold water gradually, mixing to form a dough. Wrap in plastic and chill for 30 minutes.
  4. Meanwhile, place the potatoes and onions in a pan with water to cover, add salt, and bring to a boil for 15 minutes until just tender.
  5. Drain potatoes and onions. Season with salt, pepper, and a pinch of nutmeg.
  6. Roll out 2/3 of the pastry dough and line a 9-inch pie dish.
  7. Layer the potatoes and onions in the pastry, topping with dollops of remaining butter.
  8. Roll out the rest of the dough and cover the pie, crimping the edges to seal. Make a small slit in the center.
  9. Bake for 30-35 minutes until the pastry is golden brown. Allow to cool slightly before serving.
