- vegetable oil – 2 tablespoons / 30 ml
- onions, chopped – 2 large / 300 g
- garlic cloves, minced – 3 cloves / 15 g
- ginger, grated – 1 tablespoon / 15 g
- chicken breast, diced – 1 lb / 450 g
- ground cumin – 1 teaspoon / 5 g
- ground coriander – 1 teaspoon / 5 g
- turmeric powder – 1/2 teaspoon / 2.5 g
- garam masala – 1 teaspoon / 5 g
- tomato puree – 2 tablespoons / 30 g
- canned tomatoes, chopped – 1 can (14 oz) / 400 g
- green bell pepper, sliced – 1 large / 150 g
- fresh cilantro, chopped – 1/4 cup / 15 g
- salt – to taste
- black pepper – to taste
- water – 1 cup / 240 ml
Instructions
- Heat the vegetable oil in a large pan over medium heat. Add the onions, garlic, and ginger. Sauté until the onions are golden brown.
- Add the diced chicken and cook until it starts to brown.
- Stir in the cumin, coriander, turmeric, and garam masala. Cook for another minute until the spices are fragrant.
- Mix in the tomato puree and canned tomatoes, then add the bell pepper.
- Pour in the water and stir. Let it simmer on low heat for about 20 minutes until the chicken is cooked through and the flavors are well combined.
- Season with salt and black pepper to taste.
- Garnish with fresh cilantro before serving.
