Ingredients

  • day-old bread – 300 g / 10.5 oz
  • smoked speck – 200 g / 7 oz
  • onion – 1 large
  • milk – 200 ml / 7 fl oz
  • eggs – 2
  • all-purpose flour – 50 g / 1.8 oz
  • parsley – a small bunch
  • butter – 2 tbsp / 28 g
  • beef broth – 1.5 liters / 6 cups
  • nutmeg – 1/4 tsp
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Cut day-old bread into small cubes and place in a large mixing bowl.
  2. Finely chop the onion and speck. Heat butter in a skillet over medium heat and sauté onion until translucent. Add speck and continue to cook until fat is rendered and speck is lightly crispy.
  3. Warm the milk gently and pour over the bread cubes. Let it soak for about 10 minutes.
  4. In a separate bowl, beat the eggs, add nutmeg, salt, and pepper, then pour over the soaked bread along with the speck-onion mixture and chopped parsley.
  5. Sprinkle flour over the mixture and mix well using hands until everything is well combined and holds together.
  6. Shape the mixture into dumplings about the size of a golf ball.
  7. Bring beef broth to a gentle simmer in a large pot. Carefully place the dumplings into the broth and let them cook for 15-20 minutes until they float to the surface and are cooked through.
  8. Serve the knödel with broth in bowls, garnished with additional parsley.
