Ingredients

  • stale white bread (crusts removed) – 120 g / 4 cups cubed
  • whole milk – 500 ml / 2 cups
  • onion – 1 medium, peeled
  • cloves – 6
  • bay leaf – 1
  • butter – 30 g / 2 tablespoons
  • double cream – 60 ml / 1/4 cup
  • nutmeg – 1/4 teaspoon, grated
  • salt and pepper – to taste

Instructions

  1. Stud the onion with cloves and place it in a saucepan with milk and a bay leaf. Heat gently until just below boiling point.
  2. Remove the pan from heat and let it infuse for 20 minutes.
  3. Discard the onion, cloves, and bay leaf, then add the bread to the milk.
  4. Return the saucepan to a low heat, stirring occasionally, and cook until the bread breaks down and the sauce thickens, about 10 minutes.
  5. Stir in the butter and double cream, season with salt, pepper, and nutmeg.
  6. Serve warm alongside roast poultry.
