Egusi Sauce is a popular West African dish that boasts a rich, nutty flavor with a hint of spice. Its origins trace back to the Yoruba people of Nigeria, who traditionally use melon seeds, known as egusi, to thicken and enhance the flavor of the sauce. This comforting meal is often enjoyed with fufu or pounded yam, creating a hearty and satisfying dish that brings warmth and hospitality to any gathering.

Ingredients

  • Egusi seeds (ground) – 1 cup / 150 g
  • Palm oil – 1/2 cup / 120 ml
  • Chopped onion – 1 large / 150 g
  • Tomatoes (diced) – 2 medium / 240 g
  • Red bell pepper – 1 medium / 150 g
  • Scotch bonnet peppers – 2 small
  • Spinach (fresh) – 200 g
  • Assorted meats (beef, goat) – 500 g
  • Seasoning cubes – 2 cubes
  • Salt – to taste
  • Water – 3 cups / 720 ml

Instructions

  1. Blend the tomatoes, red bell pepper, and Scotch bonnet peppers until smooth.
  2. Heat palm oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
  3. Stir in the blended pepper mixture and cook for 10 minutes until reduced.
  4. Add the assorted meats and seasoning cubes, then pour in water. Simmer for 30 minutes or until the meat is tender.
  5. Gradually add ground egusi seeds, stirring constantly to avoid lumps.
  6. Reduce the heat and let the sauce thicken for about 10 minutes.
  7. Add fresh spinach, season with salt, and simmer for 5 more minutes.
