Ingredients
- pork shoulder – 1 lb / 450 g
- pork ribs – 0.5 lb / 225 g
- chorizo – 2 links / 150 g
- cabbage – 1 head / 500 g
- carrots – 3, peeled and sliced
- potatoes – 4, cubed
- chickpeas – 1 cup / 200 g, cooked
- onion – 1 large, chopped
- garlic – 4 cloves, minced
- paprika – 2 tsp
- bay leaves – 2
- olive oil – 3 tbsp
- salt – to taste
- pepper – to taste
- water – 6 cups / 1.5 L
Instructions
- Heat olive oil in a large pot over medium heat. Brown the pork shoulder and ribs, then remove and set aside.
- In the same pot, add the onions and garlic and sauté until fragrant and translucent.
- Add the browned meats back to the pot along with the chorizo slices.
- Stir in paprika, bay leaves, salt, and pepper. Pour in the water and bring to a boil.
- Reduce heat to a simmer and cook for 1.5 hours, occasionally skimming off excess fat.
- Add the cabbage, carrots, potatoes, and chickpeas. Continue to simmer for an additional 30-45 minutes until vegetables are tender.
- Adjust seasoning before serving with crusty bread.
