Berza Malagueña is a traditional Andalusian stew hailing from Málaga, a province in the southern region of Spain. Rich in flavors, this comforting dish is typically prepared during the cooler months to warm the soul. Berza, meaning ‘cabbage’ in Spanish, forms the backbone of the stew’s robust flavor, along with an assortment of meats, beans, and root vegetables. The melding of these elements creates a deeply satisfying and aromatic dish, reflective of Spain’s rustic culinary heritage. It’s a celebration of simplicity using ingredients that are both accessible and hearty.

Ingredients

  • cabbage – 1 head / 1 kg
  • pork ribs – 500 g
  • chickpeas – 300 g, soaked overnight
  • chorizo – 2 links / 200 g
  • black pudding (morcilla) – 1 link / 100 g
  • potatoes – 3 medium, peeled and chopped / 500 g
  • carrots – 2 large, chopped / 200 g
  • onion – 1 large, diced / 150 g
  • olive oil – 3 tbsp / 45 ml
  • paprika – 1 tsp / 5 g
  • bay leaves – 2
  • salt – to taste
  • black pepper – to taste
  • water – 2 liters

Instructions

  1. In a large pot, heat the olive oil over medium heat and sauté the diced onion until translucent.
  2. Add the pork ribs and chorizo, cooking until browned on all sides.
  3. Stir in the paprika and cook for another minute, then add the soaked chickpeas, chopped carrots, potatoes, and fill the pot with water.
  4. Add the bay leaves and bring the mixture to a boil. Reduce to a simmer and cook for 1 hour, skimming any foam.
  5. Meanwhile, slice the cabbage into large chunks and cut the black pudding into thick slices.
  6. Add the cabbage and black pudding to the pot, season with salt and black pepper, and continue to simmer for another 30 minutes until all ingredients are tender and the flavors have melded together.
  7. Serve the stew hot with crusty bread.
