Ingredients

  • all-purpose flour – 2 cups / 240 g
  • granulated sugar – 1 cup / 200 g
  • milk – 1 cup / 240 ml

  • lemon zest – zest of 1 lemon
  • baking powder – 3 tsp / 12 g
  • cinnamon – 1 tsp / 2 g
  • salt – 1/4 tsp / 1 g
  • powdered sugar (for topping) – 2 tbsp / 15 g

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a rectangular baking tin (llanda) with a bit of olive oil.
  2. In a large bowl, beat the eggs and sugar together until the mixture is light and creamy.
  3. Gradually add the olive oil and milk to the egg mixture, continuing to beat until well combined.
  4. Sift in the flour, baking powder, and salt. Add the lemon zest and cinnamon. Fold gently until incorporated.
  5. Pour the batter into the prepared baking tin, spreading it out evenly.
  6. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the coca to cool slightly before sprinkling with powdered sugar.
