Arròs a la cassola, known as Casserole Rice, is a traditional Spanish dish that beautifully embodies the rustic and hearty flavors of Catalonia. Originating from the northeastern region of Spain, this dish is cooked in a ‘cassola’, a traditional clay pot, which helps release the intense depth of flavors. It combines the simplicity of rice with the richness of fresh vegetables, meat, and seafood, making it a vibrant and comforting meal that is both satisfying and delightful.

Ingredients

  • olive oil – 2 tbsp / 30 ml
  • chicken thighs, bone-in – 4 pieces
  • pork ribs – 250 g / 9 oz
  • onion, finely chopped – 1 large / 150 g
  • red bell pepper, chopped – 1 large / 150 g
  • garlic cloves, minced – 3 cloves
  • ripe tomatoes, grated – 2 medium / 200 g
  • short-grain rice – 300 g / 10.5 oz
  • chicken stock – 1 liter / 4 cups
  • saffron threads – a pinch
  • frozen peas – 100 g / 3.5 oz
  • salt – to taste
  • black pepper – to taste
  • fresh parsley, chopped – for garnish

Instructions

  1. Heat olive oil in a large, heavy-bottomed pan over medium heat.
  2. Add chicken thighs and pork ribs, sear until golden brown on all sides. Remove and set aside.
  3. In the same pan, add onions and red bell pepper. Sauté until softened and slightly caramelized.
  4. Stir in minced garlic and grated tomatoes. Cook for 3-5 minutes until the mixture turns into a paste.
  5. Add the rice, stirring well to coat it with the tomato mixture.
  6. Pour in the chicken stock and saffron. Season with salt and black pepper.
  7. Return the chicken and pork to the pan. Bring to a simmer.
  8. Cover the pan, reduce heat and cook for 15 minutes.
  9. Add frozen peas and continue to cook for another 5-10 minutes, until the rice is fully cooked and all the liquid is absorbed.
  10. Garnish with fresh parsley before serving.
