Olla Podrida is a classic Spanish stew that dates back to the medieval period. Its name, which translates to ‘rotten pot’, humorously refers to the stew’s ability to absorb and meld a wide range of ingredients into a delicious one-pot meal. Ingredients

  • Beef shank – 500 g / 17.6 oz
  • Chorizo sausage – 200 g / 7 oz
  • Smoked bacon – 150 g / 5.3 oz
  • Dried chickpeas – 250 g / 8.8 oz
  • Carrots – 2, chopped
  • Onions – 2, diced
  • Garlic cloves – 4, minced
  • Tomatoes – 2, diced
  • Paprika – 1 tbsp
  • Bay leaves – 2
  • Olive oil – 2 tbsp
  • Beef broth – 1.5 liters / 6 cups
  • Salt – to taste
  • Black pepper – to taste

Instructions

  1. Soak the dried chickpeas overnight in water.
  2. In a large pot, heat olive oil over medium flame. Add onions and garlic, sauté until translucent.
  3. Add the beef shank, smoked bacon, and chorizo to the pot. Brown the meats on all sides.
  4. Incorporate the diced tomatoes, paprika, and bay leaves into the pot. Stir for 2 minutes to release aromas.
  5. Drain and rinse the soaked chickpeas. Add them along with carrots to the pot.
  6. Pour in the beef broth, bring the mixture to a boil, then reduce heat to low and cover.
  7. Simmer for 2-3 hours, stirring occasionally, until the meats and chickpeas are tender.
  8. Season with salt and pepper to taste and serve hot.

  • Beef shank -> Lamb shank
  • Chorizo sausage -> Any spicy sausage
  • Dried chickpeas -> Canned chickpeas (reduce cooking time)
