Ingredients

  • fresh salmon fillets – 4 fillets / 800 g
  • apple cider – 2 cups / 480 ml

  • butter – 2 tbsp / 28 g
  • lemon juice – 1 tbsp / 15 ml
  • fresh dill – 2 tbsp, chopped
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Pour the apple cider into a wide saucepan and bring to a gentle simmer over medium heat.
  2. Add the sliced shallots and butter to the cider and allow the shallots to soften for about 3 minutes.
  3. Carefully place the salmon fillets into the simmering cider, skin side down. Ensure the fillets are submerged.
  4. Poach the salmon for 8-10 minutes, or until it is just cooked through and flakes easily with a fork.
  5. Remove the salmon fillets from the cider and place on a serving platter.
